I promised someone peanut butter cookies for tonight but found this flourless recipe that really intrigued me (honestly, though, because it sounded so easy to mix up without flour and I was feeling lazy).  I doubled the recipe so I could share at work.  Mine are half regular sugar and half raw sugar (I don't keep plain white sugar around and didn't have enough) and about two-thirds regular peanut butter and a third organic all-natural stuff.  I also added a splash of vanilla extract.  YUMMY!!!
