Cranberry Relish

We made this yummy (and beautiful) stuff last week in class.  Today we divided it and took it home.  We all knew that we could do that today but only a couple of people had containers.  I have a pint of it!  It's awesome and it's my new Thanksgiving tradition (I really hate canned cranberry sauce)!  I would make it a couple of days in advance so Thanksgiving Day is a little less hectic.  It was great today after being in the fridge since last Tuesday.

6 ounces cranberries
1 1/2 fluid ounces orange juice
1 1/2 fluid ounces Triple Sec
1 1/2 ounces sugar
1/2 ounce orange zest, minced
2 oranges, supremed

Combine everything except the supremes in a saucepan and stir to combine.  Cover and simmer, stirring occasionally.  When the berries burst and the liquid starts to thicken, remove from the heat and add the supremes.  Taste for sweetness and adjust with sugar.  Use immediately or cool, cover tightly, and refrigerate.  Makes 1 pint.
