Done baking!

This is my plated dessert for my final practical exam in this baking phase.  Monday we are back in the regular culinary kitchen!  The dessert had to have a three-layer yellow sponge cake with chocolate mousse, Italian buttercream icing, vanilla ice cream, chocolate sauce, and a chocolate garnish.  My garnish stinks because it was too humid and hot in our kitchen to temper chocolate well.  I couldn't get it to set up so I ended up with just curls.  The whole thing could have used more color.  I should have taken time and made raspberry sauce.  It was yummy, though!   I got a B.
